In 2023, following the brewing method of "Ori," and by dividing the aging into amphora and barrel aging, it was finished as a robust orange wine while retaining delicate aromas.
Delaware grapes carefully grown by Mr. Iwase in Kaminoyama City are harvested several times to achieve full ripeness and fermented in open tanks. After removing the skins post-extraction, long maceration is performed, followed by initial sealed aging, then divided into amphora and oak barrels for two aging processes before bottling.
Delaware, carefully polished and brewed over time, offers fresh fruit flavors and clear acidity, and can be enjoyed chilled for a refreshing taste in the early release period.
As the aging progresses, the optimal temperature rises, allowing you to enjoy the deep flavor of Delaware.
When we requested the label design with the image of the Milky Way, it feels like two owls are perched on the moon, watching over something together. We hope everyone can enjoy imagining their own story as they drink, which will make the taste even richer.
