This vintage was the last year consulting was handled by the late Patrick Leon, continuing the legacy of Professor Denis Dubourdieu. He assisted with the harvest and winemaking. It was a typical year in Japan, with heavy rain in summer but clear weather before that, allowing for optimal maturation.
The 2018 harvest was 4.59 tons, a record low quantity of Koshu grapes harvested from our vineyard.
Most of the fruit used for the sparkling wine is pergola-pressed to preserve the natural acidity of the Koshu grapes.

Fermentation was done in stainless steel, with a small addition of Koshu aged in oak to add complexity before tirage. Shizen Koshu Sparkling 2018 has been aged for over 4 years.
It was dosed in March 2023 after fermentation. The six-month rest after riddling is ideal for maturation.
