It undergoes malolactic fermentation and secondary fermentation in the bottle (Champagne method), and by intentionally leaving some sediment, it has been crafted into a cloudy type of sparkling wine with a pleasant texture and approachable flavor.
① Base wine
Fermented early-picked Koshu grapes.
"Features a refreshing aroma and flavor of citrus with a crispy acidity."
② Complementary blended wine
Late-ripened Koshu grapes are brewed and fermented.
Features an aroma like apple honey and a pleasant bitterness.
Aged for 6 months in a horizontal position (sur lie). No disgorgement. 3 atmospheres.
