Destemmed and crushed, then fermented after low-temperature maceration. Main fermentation in resin tanks at slightly low temperature. Pressed before fermentation completion and finished main fermentation in stainless steel tanks, then transferred to French oak (new barrels or second-use barrels) for malolactic fermentation. Bottled after 10 months of barrel aging.
Aroma of coffee, raspberry, cherry, spices, herbs, earth, and forest.
A faintly sweet nuance that comes later, typical of fermentation with natural yeast.
It expresses the characteristic of Japanese wine that is as smooth as water yet full-bodied.
The grapes from Hokkaido are truly wonderful. Perfect for red meat dishes.
