Produced with 100% grapes from Ms. Kotoyo Imamura of Bee’s Knees Vineyards in Tsukuba City, Ibaraki Prefecture.
Since 2015, various grape varieties for wine have been cultivated at the foot of Mount Tsukuba. The grapes used this time are Chardonnay and Semillon (Ch 86%, Se 14%).
A "departure" wine symbolized by a small bird taking flight. After fermentation in stainless steel tanks, it was aged for about 7 months in French oak barrels (partly fermented in tanks).
A wine with aromas of vanilla and coconut, flavors reminiscent of honey, and a well-balanced taste full of minerality. It is recommended to enjoy it slowly at around 15~20°C, not too chilled, to savor the aroma.
