Regular Price ¥3,080100% of the grapes used are Kyoho from Ukiha City, Fukuoka Prefecture. During maceration, the pigeage was done slowly and gently once a day to avoid crushing the skins. To prevent the release of volatile acidity, care was taken with the amount of carbon dioxide in the tank after the pigeage, ensuring that the surface of the mash did not come into contact with oxygen during the latter stages of fermentation. After 11 days of maceration, a slow press was performed using a basket press, followed by fermentation in stainless steel tanks and aging in amphora.
The total fermentation period is about 1 month. After approximately 5 months of aging in amphorae, it was blended in a ratio of about 1:1 with a red wine made from 100% Kyoho grapes from Ukiha City, which had been aged in stainless steel tanks (with maceration for 5 days), and bottled on April 21, 2023. The "light flavor" characteristic of Kyoho red wine was used as the standard during blending. Two rackings were performed before bottling, and a small amount of sulfur dioxide was used during the blending before bottling. Wild yeast was used. Unfiltered and unclarified. No chaptalization or acid adjustment was performed.
