Regular Price ¥3,080100% Kyoho grapes from Ukiha City, Fukuoka Prefecture were used. During maceration, pigeage was done slowly and gently once a day to avoid crushing the skins. To prevent volatile acidity, the amount of carbon dioxide in the tank was carefully monitored after pigeage, and care was taken to ensure the surface of the must did not come into contact with oxygen during the final stages of fermentation. After 11 days of maceration, the must was slowly pressed with a basket press, fermented in stainless steel tanks, and aged in amphora.
The total fermentation period was about one month. After about five months of amphora aging, it was blended approximately 1:1 with a red wine made from 100% Kyoho grapes from Ukiha City (maceration for 5 days) that had been aged in stainless steel tanks, and bottled on April 21, 2023. The standard for blending was the "light taste" characteristic of Kyoho red wine. The wine was racked twice before bottling, and a small amount of sulfites was used at the time of blending before bottling. Wild yeast was used. Unfiltered, unclarified. No sugar or acid adjustments were made.
