Speaking of Ohno Farm in Takahata Town, Yamagata Prefecture, if you know Alfiole, they are a legendary grower cultivating the top cuvées Rosso (Merlot) and Oro (Chardonnay).
And this Merlot became a very luxurious cuvée, as Mr. Meguro kindly shared grapes for just one barrel. I have memories of making it with great nervousness.
In 2023, the rainfall was less than usual, and the harvest period was blessed with clear weather, resulting in a wonderful vintage.
The Merlot, lovingly grown by Ohno Farm, was made with a simple process. During fermentation, only a few push-downs were performed, and pressing was done gently and carefully to slowly draw out the potential of the grapes.
Through 7 months of aging in old barrels, smooth tannins, pleasant acidity, and fruitiness were brought out.
