We conducted skin contact at extremely low temperatures for two days and entrusted fermentation to natural yeast using pied de cuve.
This year, we tried fermentation at ultra-low turbidity.
Compared to before, fermenting at a much lower turbidity has guided the liquid to become more aromatic.
Its influence is clearly reflected in the wine, which now carries a distinctly different aroma from last year’s Penguin.
Whether this operation will prove fortunate or unfortunate, I want to watch the future maturation closely.
At the top comes the fragrant aroma of citrus fruits like glamorous grapefruit.
When sipped, a soft liquid spreads with a faint bitterness.
The Yoichi vineyards, which tend to have high iron content that can easily become harsh, are brought closer to the ideal texture by fermenting with natural yeast.
