Regular price ¥8,800In 2018, we released the Famille series for the first time with the Merlot "Kun" Cuvee Kuniko. This time, as the second installment, it is released with Pinot Noir. This series is only released in years when the grapes can be harvested at their best quality and the winemaking process results in an exceptional vintage. In 2023, the weather was good from early on, and with little autumn rain or typhoons during the harvest season, it was a very favorable year for the thin-skinned, tight-clustered Pinot Noir, with no berry splitting caused by rain. Harvesting took place over six days from September 30 to October 5, with sugar content exceeding 23 degrees. In the past, various winemaking methods have been used, including whole cluster fermentation, destemming, one-third whole cluster fermentation, natural fermentation, and selected yeast fermentation. This year, after full destemming, 20% of the stems were sun-dried for three days, then the dried stems were returned to the tank. After six days of cold maceration, fermentation took about one week with dried yeast. After malolactic fermentation, the wine was aged in barrels for about 12 months (30% new barrels) and then matured in bottles for 9 months before release. This dry red wine offers complex flavors with aromas of red fruits like raspberry and strawberry, spices, medicinal herbs such as sweet wormwood, mushrooms, and forest floor leaves.
