This Chardonnay is harvested in Tsuruta Town, where the grapes are sorted and hand-destemmed at the vineyard and winery, then fermented with natural yeast. After that, it undergoes malolactic fermentation (MLF). After MLF, it is left undisturbed in the tank without racking. The lees from healthy grapes are clean and flavorful, and the continued contact between the lees and the wine enhances the umami.
