After harvesting Sauvignon Blanc from Tsuruta Town, careful sorting was done in the vineyard and winery, and the hand-destemmed grapes were fermented with natural yeast. Then it transitioned to malolactic fermentation.
Bâtonnage (stirring the wine after fermentation) is repeated once every 1 to 10 days, and the tank aging period is about 4 months. When a tea-like aroma appears, low sulfur dioxide is added, and the wine is bottled unfiltered.
It has been crafted into a cup that allows you to fully enjoy a deep flavor.
Pale amber color, aroma of white flowers, scent like navel orange, with a faint hint of black tea.
In addition to citrus fruits, there are flavors reminiscent of loquat and Japanese pear, with fine acidity and a mineral sensation that adds depth to the taste. The astringency like the core of a Japanese pear lingers through the finish.
