Steuben grapes from Tsuruta Town were sun-dried for about two months and fermented with the precious Jomon yeast , inherited since the Jomon period. Aged for about 6 months in stainless steel tanks.
A beautiful ruby color. Aromas of dried cranberry, jujube, licorice, and spices.
Fruit flavors like blackberry, powerful tannins and acidity, and a savory taste reminiscent of jerky, with a complexity that you wouldn't expect from stainless steel tank aging.
The finish is very long, and the umami continues, allowing you to enjoy it slowly.
