Made with carefully selected Chardonnay from our own vineyard, harvested in 2022.
Using clear, high-acidity juice from the top layer, primary fermentation was done in stainless steel tanks, then bottled with yeast and sugar added for aging.
Over two years of secondary fermentation and aging in the bottle. At disgorging, we added Chardonnay wine that underwent the same secondary fermentation in the bottle and then corked it.
