In Ueno, Nanyo City, Takahashi-kun works at the post office while doing weekend farming to protect the farm of his late father. He conducted a 120-day maceration of Merlot and Berry A grapes grown on abandoned farmland inherited from his father, which he cultivated himself for the first time. The year 2023 was hot with little rain. The grapes ripened healthily to a deep black color. By performing a 120-day maceration (with two punch-downs) to bring out the strength of the skins, the wine became a gentle and smooth red without excessive bitterness. The smooth and mellow feeling born from low-temperature maceration and malolactic fermentation (MLF) makes it enjoyable both chilled and at room temperature.
