Made with Merlot from the Okitama region of Yamagata Prefecture. To reduce the intensity reminiscent of the hot summer of 2024, the destemmed and crushed grapes were cold-macerated for 60 days with minimal stirring, using the cap to block air inside the tank—this is an MC wine method.
This creates more body in the wine compared to the usual sealed MC method, and also brings out more "aroma" and "softness" than typical maceration.
We wanted to express a smooth and gentle wine using Merlot from Yamagata, so we made it using this method.
The "pyrazine (green aroma)" is minimal, with a smooth, gentle juiciness dominating, along with a hint of sweetness, making it a versatile wine for various occasions.
We also perform thorough malolactic fermentation (MLF), so you can enjoy an even more complex and delicious finish.
Although the production quantity is small, please enjoy "plain Merlot," just like "plain udon" or "plain soba."
