We couldn't produce it in 2023, but this wine was made as a playful experiment during the assemblage of a different version called "GROOOVE NIKUYARO." It combines the softness of Merlot and the malolactic flavor of Berry A, evoking images of richer, fattier meat dishes. For example, lamb ribs or Jingisukan (grilled mutton). While "GNY" was intended to pair with a wide range of meat dishes, this "Ura" (裏, meaning "hidden" or "back") allows you to enjoy the unique qualities of "Japanese grapes" even more. Since it undergoes lactic acid fermentation in the bottle, it is slightly fizzy when first opened. The changes on the second day after opening are quite intriguing. The mild carbonation fades, and the wine is enveloped in a rich "milky" aroma, with moderate tannins and a sharp acidity. It’s a flavor that makes you want to enjoy it while nibbling on semi-hard cheese. The 2019 version of "Ura Niku" was created on a whim, and we continued this "impromptu blend" approach for the 2023 version as well. Please enjoy it chilled or at room temperature.
