The pulse of the land, the pulse of the grape growers, the pulse of the winemakers, the pulse of those who introduce this wine, the pulse of those who drink this wine. I believe that the region is formed by all these pulses.
The Kōshū born from the only "Kōshū" vineyard in Nanyō City, after de-stemming and crushing, is left in skin contact for 48 hours before pressing. Without any pressing, it is aged in 2 barrels of 2-year French oak (sulfur burned for barrel storage), 2 barrels of 3-year French oak (sulfur burned for barrel storage), and the remaining juice is naturally fermented at low temperatures in stainless steel tanks.
Overall, the balance is 9:1 for barrel:stainless steel. After fermentation in oak, no batonnage (stirring) was done during the middle and later periods to retain the carbon dioxide during fermentation. This was done to preserve the delicate and fine acidity characteristic of the 2023 Akayu Koshu.
The unique soft texture and balance with acidity from French oak fermentation will pair well with various dishes. It can be aged for 5 to 10 years, but I believe its flavor can also be enjoyed in its fresh state.
The Yellow Magic Winery is the only wine that specifies its antioxidant, but it is a wine that does not use any sulfites except for oak sulfur treatment.
