This wine is based on the concept of "Bottling the VINEYARD" — bottling the vineyard as it is.
The pulse of the earth, the pulse of the grape growers, the pulse of the winemakers, the pulse of those introducing this wine, and the pulse of those drinking it — I believe the region is shaped by all these pulses.
After destemming and crushing Koshu grapes from the only Koshu vineyard in Akayu, Yamagata (Nanyo City), the juice was left in skin contact for 48 hours before pressing. Without racking, the juice was naturally fermented at low temperature: two 2-year-old French oak barrels (treated with sulfur roasting for wood preservation), two 3-year-old French oak barrels (also sulfur roasted), and the remaining juice was fermented in stainless steel tanks.
Overall, the balance is 9 parts oak to 1 part stainless steel. During and after fermentation in oak, no bâtonnage (stirring) was done to preserve the carbon dioxide produced during fermentation. This is to maintain the delicate and fine acidity characteristic of Koshu from Akayu in 2023.
The delicate texture unique to French oak fermentation and the balance with acidity make it suitable for various dining occasions. It can be aged for 5 to 10 years, but I believe you can also enjoy its flavor while fresh.
This is the only wine from Yellow Magic Winery that clearly states the use of antioxidants, but aside from the oak sulfur roasting, no sulfites are used at all.
