In Kamiyama, Nanyang City, Takahashi-kun is working at the post office while engaging in weekend farming to protect his late father's farm. This wine was made at the perfect timing when the Delaware grapes inherited from his father turned a ripe pink color.
I have become fascinated with the acidity of Aoderra more than before, and at Aoderra in Yamagata Okitama, I have been creating various wines with a range of acidity, exploring the category of "Aoderra." However, I realized that the timing when it turned pink, rather than blue, has a pleasant balance of acidity and fruitiness, which is interesting, leading me to explore not only "Aoderra" but also "Pink Dera."
I would like to gaze at "Japonese" born from this pink Dela category. This wine undergoes a slow lactic fermentation over 4 months after the white liquid preparation, resulting in a flavor that combines lactic notes, pleasant acidity, and umami.
