This is an orange sparkling wine made by three friends (T, E, F), nicknamed TEF, who stood up to protect the abandoned vineyards in the Honzawa area of Yamagata City. They used Pink Dela grapes (which are more colored than Blue Dela and have an interesting balance of sweetness and acidity) and allowed secondary fermentation in the bottle. The sharp acidity and orange umami create an interesting flavor. The Pink Dela was fermented for a full 60 days. When poured from the bottle into a glass, fine lactic acid fermentation carbon dioxide aromas are fragrant. This is not simply a sour "Blue Dela" wine, but an exploration of the new growth category called "Pink Dela." Please enjoy this casual, pop-style orange sparkling wine made from grapes they cultivated.
