By fully embracing the brilliant sun of 2023, the flavor has become a contrast to that of 2022. Harvest started earlier than ever before, on September 13. From the plots harvested afterward, many fully ripe Albariño grapes were found, already giving off a ripe aroma from the juice. Four types of base wines with different ripeness levels were fermented separately and then blended to achieve balance. With an acidity level unlike anything we've seen before, acid adjustment is generally necessary, but with our pride of not forcing what isn’t in the vintage, we do not add acid. While this might reflect a bit of ego in trying to approach the ideal image from the winemaker’s perspective, we are relieved to have expressed the unique feature of the 2023 vintage’s abnormal heat.
