In addition to its high sugar and acidity levels, just looking at the low pH component values, the quality of the grapes is such that it feels like they are not from Japan, and we are able to harvest them every year so far. When we brew a dry wine head-on, the alcohol approaches 15%, the acidity exceeds 9g/L, and we have experienced in past trials the production of an extremely strong wine with a pH around 3.0. Considering the compatibility with meals and the burden on the body, we would like to soften the wine quality a bit more. The key to mellowing the hard base wine was Chardonnay. Its overly strong character is softened, making it more approachable and likable. This is a blended wine for Petit Manseng enthusiasts, named Phil-Manseng.
The aroma is based on the stone fruit of white peach, blended with tropical flavors of pineapple and mango, along with spices of vanilla and cardamom. Thanks to the firm acidity, the alcohol volume does not feel too strong, making it a wine that can enhance a meal or take center stage.
