Regular price ¥4,620Made using our own Sauvignon Blanc grapes, this wine aims to combine the green and floral notes of the variety with the richness from the skins and the lightness of sandy soil, creating a gentle nuance that seeps into the body.
The winemaking process involves ultra-low temperature maceration for 72 hours, pressing, juice clarification, and barrel fermentation. Aging is also done in barrels, with bottling in early spring.
Unlike long-aged orange wines, this method preserves the grape's characteristics while creating distinctive flavors on top.
The top aromas are tropical fruits like pear, lychee, and pineapple. Beneath that, you can sense the green notes of Sauvignon Blanc.
The mouthfeel is soft and gradually transforms into a thick, syrupy liquid over time. It doesn't have the typical Sauvignon character at all, but I believe it is the best expression of Sauvignon Blanc grown in Niigata's sandy soil.
Personally, I named it "Umigame" because this flavor reminds me of the beach and the sea.
