A wine made from sandy Zweigelt. We aim to create a liquid with the charming aroma of Zweigelt, rich fruitiness, and a complex, lingering umami. In 2021, the temperature dropped sharply after the Bon holiday, making it a wonderful year for this early-ripening variety. To bring out the fruit's quality, maceration was kept short to allow a feeling of vibrant acidity. The top aroma and the first impression on the palate are characteristically fruity of Zweigelt. Beneath that, acetic acid subtly appears and disappears, giving a sense of complexity and lingering umami. Over time, it changes to reveal nuances of various spices. This year, too, it finished with a flavor I love that somehow reminds me of wines from southern France.
