Regular Price ¥4,9502023 was a year of high temperatures and drought. Albariño was the most affected by the harsh climate. Despite it being summer, leaf color change began, and even before harvest, many clusters dropped leaves and shriveled berries appeared.
Originally, Kawauso was not planned to be made in 2023, but it was produced by gathering Albariño clusters that had dropped leaves before harvest.
True to the animal series, the brewing involves two days of maceration followed by barrel fermentation and aging using natural yeast in old barrels.
The top notes are citrus fruits like mandarin, lemon, lime, and tropical fruits like pineapple. Slight hints of Dong Ding oolong tea and jasmine can be detected beneath.
Compared to the standard cuvée reminiscent of perfume-like elegance, this complexity where various aromas blend might be another aspect of Albariño. When tasted, it has a soft yet gripping acidity in the mouth, and you can also sense the difference from other animal series.
The hardness felt from the liquid suggests future aging potential.
