Made from Chenin Blanc grapes grown in our own vineyard, we aimed to create a gentle flavor that seeps into the body.
2024 brought weather that could be called excellent for this variety. This year, fermentation was again entrusted to natural yeast.
The winemaking method remains the same with three days of skin contact, but lately, I've realized it has naturally become a proper "Chenin Blanc."
Originally, various winemaking techniques were used to compensate for deficiencies, but thanks to the vine's age, the flavor has become more balanced. Perhaps it's time to explore a different honeybee flavor.
At the top, you sense ripe fruit, honey notes, and hints of small white flowers. When sipped, a rich, sweet liquid spreads across the tongue, followed by vanilla and nutty flavors from the barrel.
The aftertaste gradually reveals bitterness and umami.
As the vines age, the yield has decreased inversely; where we used to produce three barrels, now we can barely make two.
It's a favorite variety, but due to many cultivation challenges, we haven't expanded the vineyard.
To appreciate the quality of the liquid, please avoid chilling it too much before drinking.
