Made using Chenin Blanc from our own vineyard, aiming for a gentle flavor that seeps into the body.
2024 was a year with weather that could be called excellent for this variety. This year as well, fermentation was entrusted to natural yeast.
The brewing method remains the same with three days of skin contact, but recently I've been thinking, 'Somehow it has naturally become a proper "Chenin Blanc."'
Originally, various brewing techniques were used to compensate for deficiencies, but thanks to the aging vines, the flavor has become more balanced. Perhaps it is time to explore a different taste of honeybee.
The top notes are ripe fruit, honeyed sensations, and nuances of small white flowers.
When you take a sip, a rich and sweet liquid spreads over the tongue, followed by hints of vanilla and nuts derived from the barrel.
The aftertaste gradually seeps in with bitterness and umami.
As the vine ages, the yield has been decreasing inversely, and while we used to produce enough for three barrels, recently we can barely make two.
It's a favorite variety, but due to many cultivation issues, we have not been able to expand the vineyard.
To appreciate the quality of the liquid, please do not chill it too much before drinking.
