We used 100% Cabernet Sauvignon from contracted vineyards. After fermentation and aging in stainless steel tanks, secondary fermentation was carried out in the bottle.
With the mild acidity of Niigata grapes, it’s impossible to make a crisp wine like Champagne. Musasabi recognizes gentle acidity as a unique characteristic and aims to create a relaxed sparkling wine every year.
On the other hand, with this 2023 vintage, you can feel a gradually rising vertical finish. To be completely honest, this nuance was unintentionally created during the secondary fermentation in the bottle.
I suppose I should lament my own lack of skill... but it has actually become something truly delicious.
I feel that the softness of the liquid after switching to natural yeast and the very subtle hint of acetic acid have elevated Musasabi to a higher level of flavor.
Writing it like this might make you imagine an unstable wine, but even after two weeks of opening, there is no hint of bean-like nuances, and because it undergoes a light disgorgement, it has a clear finish with almost no sediment.
