Albariño, which can be called the hallmark of Cavedocchi.
In wine regions, grapes suited to the land combine conditions of being disease-resistant (requiring little care), high-yielding, and possessing aromas and flavors unique to that land.
In Spain's Rías Baixas, Albariño is known as the 'wine of the sea,' and its annual rainfall is close to that of Niigata (both around 1800mm), cultivated in well-drained soils near the sea.
Albariño grown in our sandy soil requires almost no care (less than a quarter compared to the difficult-to-cultivate Chenin Blanc and Riesling), yields a large harvest, and reveals aromas of jasmine and Dong Ding oolong unique to our land.
In 2024, Niigata City was blessed with weather where the rainfall in August was 53mm, significantly below the average (the average rainfall over the past 10 years is 146.9mm), making it a wonderful vintage for white varieties.
The taste has an elegant perfume-like aroma of jasmine, Dong Ding oolong, and white peach, with hints of dill, clove, and vanilla in the background.
When sipped, the acidity and bitterness derived from the variety and the rich fruit are pleasant, and combined with the noble aroma, the finish is long and fragrant.
It has a delicate flavor that has the lightness of sandy soil yet does not feel thin.
To faithfully express this wonderful varietal character and terroir, it is simply brewed only in stainless steel tanks.
Furthermore, this year a portion was fermented with natural yeast. The addition of a rich mid-palate derived from natural yeast has resulted in a scale larger than before.
