Sabre means 'sand' in French. It is Carvedocchi's flagship named after our greatest feature, the sandy soil.
The Bordeaux varieties were chosen to express the nuances of sandy soil.
We blended Petit Verdot, Merlot, and Malbec, led by Cabernet Sauvignon.
Wines made from a single variety tend to lean heavily on that variety's characteristics, but by blending multiple varieties like this, the unique traits of each are neutralized, resulting in a wine that strongly reflects the soil and climate.
The scorching heat and drought of 2023. Bordeaux varieties were harvested two weeks earlier than usual, with the harvest at the end of September.
Usually, harvesting two weeks earlier causes green methoxypyrazine issues, but thanks to abundant sunlight, there is no negative greenness, and ripe fruit fills the mouth.
The light taste is characteristic of sandy soil, but this year features silky tannins and rich fruit flavors.
This 2023 Sabre red, a unique vintage, is a very exciting bottle to see how it will mature.
