Using Delaware grapes from our own farm in Nanyo City, Yamagata Prefecture. No pesticides other than Bordeaux mixture are sprayed on the grapes, and they are organically cultivated without fertilizer or compost. Two amphorae are used: one undergoes 24 hours of skin contact followed by fermentation and aging in the amphora; the other is destemmed Delaware grapes fermented on the skins for 15 days and then aged in the amphora. After about 9 months of aging, it is bottled. Fermented with wild yeast, unclarified, unfiltered, and no added antioxidants.
