Using Delaware grapes from our own farm in Nanyo City, Yamagata Prefecture. The grapes are grown organically without any pesticides other than Bordeaux mixture, and without fertilizers or compost. Two amphorae are used: one undergoes 24 hours of skin contact followed by fermentation and aging in the amphora; the other uses destemmed Delaware grapes fermented on the skins for 15 days and then aged in the amphora. After about 9 months of aging, the wine is bottled. Fermented with wild yeast, unclarified, unfiltered, and with no added preservatives.
