Made with 100% grapes from our own vineyard in Nanyo City, Yamagata Prefecture. The grapes are grown organically without any pesticides except Bordeaux mixture, and without fertilizers or compost.
Using two amphorae: one blends Shine Muscat, Niagara, Albariño, and Delaware grapes, undergoes nine days of skin fermentation in the amphora, and matures in the amphora. The other uses Delaware grapes, which have 24 hours of skin contact before fermentation and maturation in the amphora. After about seven months of aging, it is bottled.
Fermented with wild yeast, unclarified, unfiltered, and without added preservatives.
