Using 100% carefully selected Koshu from our farm in Katsunuma, the juice is placed in tanks together with skins and seeds just like red wine, fermented with wild yeast without added antioxidants, and aged unfiltered in French oak barrels.
In the shelf-trained fields of the Shimo Iwasaki and Todoroki Hikawa districts, no insecticides are used, and pests are removed manually.
Managed only with pesticides of lime sulfur mixture and Bordeaux mixture. The temperature during fermentation is left natural, fermenting for 11 days, then pressed and aged for about 11 months in French oak barrels and stainless steel tanks.
