This wine blends Muscat Bailey A grapes from two vineyard sites in Katsunuma’s home farm: Todoroki and Hishiyama districts. In 2023, benefiting from abundant sunshine, the alcohol content rose from the previous 11% range to over 12%, and production reached a record high of 565 bottles, making it the best vintage yet.
In the vineyard, we minimize the use of chemical pesticides and insecticides as much as possible. During brewing, no antioxidants are added, fermentation is done with wild yeast, and the concept includes no added sugar, no added acid, no filtration, and no fining. The wine is aged and blended in French oak barrels for 12 months. Both vineyard work and brewing are done manually by everyone involved, aiming to create an inclusive community through daily efforts.
A rare wine made solely from grapes that uniquely expresses the original color and flavor of Katsunuma grapes. "Toxic" means addictive. It was named Toxic to imply that it’s a wine you’ll want to drink again and again. This is the winemaker’s second creation using a method filled with their passion, hence the addition of "Ⅱ."
