The 2022 style is a blend of three types of cuvées. From 2022, we challenged various things. This wine was made by fermenting three different cuvées, each produced with different methods and raw materials, including destemming machines, hand destemming, and grape yield restriction (one cluster per new shoot). We performed cold maceration to extract pigments and careful pigeage, using only naturally flowing wine without applying pressure after fermentation. Then, malolactic fermentation was carried out, followed by aging in barrels. While regularly checking the taste, the wine was refined in the barrels, then each cuvée was transferred from barrels to stainless steel tanks, and finally blended. Bottled unfiltered. This is a special wine blended with yield-restricted wine.
