San Mamoru Winery / Pinot Noir Classic 2021 (Red) 750ml

A medium-bodied red wine made from estate-grown Pinot Noir in Mutsu City, Aomori Prefecture.
In 2021, the estate vineyard in Mutsu City, Aomori Prefecture, experienced higher than average sunlight and temperatures, with less rainfall and favorable weather. The grapes produced were not only more abundant than usual but also high-quality with a well-balanced combination of high sugar and acidity.
The harvested grapes not only yielded a higher quantity than usual but also achieved a balanced, high-quality profile with very high sugar content and matching acidity.
The harvested Pinot Noir underwent about five days of cold maceration, followed by a 14-day fermentation period.
The extraction process during this time was inspired by "nimono" (simmered dishes), with strict temperature control and liquid circulation to prevent extraction of off-flavors.
After fermentation, free-run and press-run wines were separated for malolactic fermentation; free-run aged in barrels and press-run aged in stainless steel tanks for two years.
Blended with 60% barrel-aged wine and 40% stainless steel tank-aged wine, bottled unfiltered.
A clean aroma expressing the characteristic scents of Pinot Noir such as strawberry, raspberry, blueberry, and cherry, with a slight hint of matured leaf mold and added complexity from the French oak aroma.
The acidity is slightly lower compared to usual years but feels very clean, enhancing the wine's richness.
The deep color and slightly strong tannins, symbolizing the blessing of fine weather, suggest a high aging potential, and combined with the aroma of French oak, it results in a classic Pinot Noir.
