This natural wine started from an encounter with a farmer.
About the vineyard: Mainly organic fertilizer, no herbicides, reduced pesticide farming method, and the fruit sugar content is 20.2 degrees (average).
About brewing: After sorting, 90% destemming, crushing, it is put into stainless steel tanks for about two weeks of maceration and fermented with wild yeast.
After using the saignée method to draw off, fermentation was carried out at a low temperature of 14°C to 16°C for a total of four weeks.
No additives such as enzymes, fermentation aids, or antioxidants are used.
After fermentation, it was left in contact with the lees for about two months, during which two batonnage were performed.
It is bottled unfiltered to reflect the umami of the lees.
It is a bottle that you can enjoy for its balance.
