Seven Cedars Winery / MAUVE KOSHU 2024 (White) 750ml
Regular price ¥3,300This is a deeply flavorful Koshu wine made by fermenting fully ripe Koshu grapes, which have been well-colored by ample sunlight, with their skins, fully drawing out the grapes' components.
The wine name MAUVE is inspired by the color of Koshu grapes. Hiroko Takano, the head winemaker at 7c winery, once spoke with an elderly man who used to cultivate Koshu grapes. When asked how to describe the indescribably beautiful color of Koshu grapes, she was at a loss for words. The man explained that many people studied it and settled on the term "mauve." At that time, Takano promised the late gentleman that if she ever made a wine fermented with whole Koshu grapes, she would name it Mauve. The name of this wine comes from that story.
It has a golden color with an orange tint, blending aromas of Kanro candy, lemon, banana, and honey. From the first taste, you can feel the refreshing citrus peel, astringency, and bitterness, with the components of Koshu grapes fully extracted through fermentation, giving it a rich body. It is distinctive but pairs well with food, and as it matures in the bottle, the astringency will mellow, further expanding its compatibility with dishes.
