Regular price ¥3,850The Pinot Noir, which had a low yield, was co-fermented with Merlot.
Since the Merlot from Northern Alps Vineyard uses the winemaking technique *semi-carbonic maceration* used for Pinot Noir and Gamay (Beaujolais), it often results in a wine with nuances similar to Pinot Noir, so we tried co-fermentation with Pinot Noir hoping it would make a good wine.
Only healthy grapes with almost no damage or blemishes, carefully and thoroughly selected, are used, and fermentation is done with natural yeast.
A pale color like strawberry jam made with unrefined brown sugar. In addition to the aroma of small red fruits such as dried strawberries and raspberries, there is a strong nuance of black tea in both color and scent.
The soft mouthfeel comes from the Merlot. It is co-fermented in a ratio of Merlot 7: Pinot Noir 3, but Pinot Noir is dominant. Merlot gently supports the Pinot Noir... that's the impression.
This was the one I wanted to do most. But carrying the feelings toward Pinot Noir, which is said to be the most difficult and troubling, it quietly appears in a new form, like the faint sound of rain you can barely hear when you listen closely.
