Using Koshu from Hayama in Makikyo Town, Yamanashi Prefecture, and our own Koshu from our vineyard in Katsunuma Town. We select only well-colored grapes, and after approximately two weeks of maceration fermentation, we press them and age them in barrels for about 6 months.
The complex aromas of pear, quince, violet, and marguerite spread out. The fruity acidity and rounded, pleasant astringency give depth to the flavor, while the rich umami that gradually expands lingers long in the aftertaste.
