Using Koshu grapes from Hayama in Makioka Town, Yamanashi Prefecture, and from our own vineyard in Katsunuma Town. Only well-colored grapes were selected, fermented with skin contact for about two weeks, then pressed and aged in barrels for about six and a half months.
Complex aromas of pear, quince, violet, and marguerite unfold. The fruity acidity and rounded, pleasant astringency add depth to the flavor, while the rich umami gradually spreads and lingers long in the finish.
