Using seeded Delaware grapes from the Kubo-te area near Kaminoyama City, Yamagata Prefecture, we separately produced two lots: a white wine (blanc) that brings out umami and aroma through short skin contact and low-temperature fermentation, and an orange wine (orange) that extracts umami and astringency from skins and seeds through maceration fermentation. After fermentation, they were blended together. This light dry orange wine features a pleasant acidity and subtle astringency with floral aromas of cotton candy and apple.
