Using seeded Delaware grapes from Yamagata Prefecture (near the Kubo-te area of Kaminoyama City), two lots were made separately: a white wine (blanc) that brings out umami and aroma through short skin contact and low-temperature fermentation, and an orange wine (orange) that extracts umami and astringency from skins and seeds through maceration fermentation. After fermentation, they were blended. This light dry orange wine features a floral aroma of cotton candy and apples, with firm acidity and a pleasant subtle astringency.
