Chardonnay and Pinot Noir harvested from our own vineyard were barrel fermented and then aged in barrels for 9 months, followed by 6 months of aging in stainless steel tanks. After that, secondary fermentation was carried out in the bottle, with an additional 44 months of bottle aging. Then, riddling was performed, and each bottle was carefully disgorged by hand, followed by a further 2 months of aging.
