We blended Chardonnay from two vintages (2022 and 2023) harvested from our own vineyard in Makioka Town. The result is a well-balanced wine that showcases fresh fruit flavors along with sweet aromas and nuttiness derived from the barrels.
We are pairing two wines that are significantly different in terms of winemaking, rather than differences due to vintage factors such as weather and grape ripeness.
In 2022, we aged in new barrels using sulfur dioxide. In 2023, we fermented in stainless steel tanks without added sulfur dioxide. While I felt that each could have been bottled separately and been good in its own right, blending them resulted in a wine that has something new, where each enhances the other in a multiplicative way.
