This Koshu sparkling wine is made by producing base wine from Koshu grapes, followed by traditional bottle fermentation and one year of bottle aging.
Since the grapes are harvested with high acidity, dosage (adding sugar) is usually done to adjust the taste, but this was finished as Brut Nature (no dosage).
Kochi, known for its crisp, dry sake culture. This wine similarly has a sharp, dry taste, but the sur lie extraction gives it a savory finish.
A citrus aroma centered on lemon, lemon peel, lime, and grapefruit, with emerging nuances of aging such as bread and honey.
This wine can be enjoyed now, but it also has potential for aging.
