An early spring, a summer with consecutive midsummer days, a chill during Obon, and a fall blessed with mild good weather in 2021.
In Chardonnay, the high level of maturity was widely observed throughout the village. As I tasted the grapes while touring the vineyards every week to decide on the harvest date, I felt a sense of surprise and joy at how much more mature the seeds were in many vineyards than usual, and my heart danced with anticipation. The wine made from grapes that were well-ripened while maintaining acidity due to the coolness of the mornings and evenings and the sun during the day has a rich flavor characterized by the concentration of fruits like apples and lemons, along with a refreshing acidity that tightens the palate.
