The year 2023 was characterized by a long, hot, and dry summer. Although some vineyards experienced strong water stress, overall, the Sauvignon Blanc benefited from low rainfall, resulting in high health quality.
In the brewing process, some grapes underwent skin and juice maceration before fermentation. Leaving it to cool overnight and checking the next morning, the cool air in the room during maceration and the fresh aroma from the grapes and juice made the morning heat, unthinkable for September, suddenly disappear.
A flavor where the refreshing acidity carries the pleasant aromas of lime, lemon peel, and herbs.
