In late October, during the latter half of the preparation, when you climb up to the fermentation tank to work, the rising aromas and the warmth from the fermentation create such a pleasant feeling that you don't want to stop working. It's a cozy and happy moment during the time when the brewery starts to get quite cold. The year 2019 had record-breaking weather, including a long rainy season and large typhoons in autumn. The mouthfeel is smooth, with a concentrated fruitiness reminiscent of prunes, gradually rising notes of bitter chocolate and spices, and the tannins intertwine, leading to a rich aftertaste.
