Are you familiar with the grape called "Hokujun"? Also known as Muscat Hamburg Amurensis, it is a very vigorous variety, and its grape leaves are often larger than a human face. This Hokujun was fermented and barrel-aged. When you think of wild grapes, you might imagine a very strong acidity, but since the harvest time was extended to full ripeness in late October, the acidity is not that strong.
By blending whole-cluster fermented Muscat Bailey A and Hokujun, you can sense the sweet aroma derived from Bailey A in the glass. The color is very vivid, and although you might expect a rich taste, it is actually refreshing. It has a light flavor with acidity similar to perilla and a faint sweet aroma. Please enjoy the long-awaited field blend from winemaker Yosuke Akiba and Chim Dream Winery.
