We are challenging fermentation with wild yeast. Using Delaware grapes from Yamagata Prefecture, we soak and ferment them with the skins intact using the same method as red wine, resulting in an orange wine with color extracted from the skins. It has sweet aromas of dried apricot and osmanthus, a sweetness like persimmon, and moderate astringency. This table wine pairs well with a wide range of dishes, especially Japanese cuisine.
