Using only the free run juice after skin contact, it underwent natural fermentation for over nine months, then was aged for three months in a third-use barrel before bottling. Aromas of white peach, pear, and kabosu citrus. It has a slight residual sugar and a rich flavor, making it very pleasant to drink. Enjoy it for up to one week after opening.
We previously released a Kerner barrel-aged press run, but this time we used only the free run juice.
The press run was also very good, but this one has an even higher quality.
This is the best wine Kitani has ever made. Although it's frustrating that the grapes were not grown by himself, it truly made him appreciate the excellence of Hokkaido grapes.
The aroma, acidity, length of finish, and flavor in the mouth are all excellent.
By barrel aging during the final stage of fermentation, we enhanced the Kerner's potential by adding a slight barrel aroma and tannins for tension, without introducing oxidative nuances.
This was Kitani's first time working with Kerner, and he feels he was able to craft it without compromising the excellent potential of the grapes. It pairs well with grilled white fish like tilefish, shellfish, and Japanese sweets.
