Only the free-run juice after skin contact was used, naturally fermented for over 9 months, then aged for 3 months in a third-use barrel before bottling. Aromas of white peach, pear, kabosu, etc. It has a slight residual sugar and a rich taste, making it pleasant to drink. Enjoyable for up to one week after opening.
Last time we released the Kerner barrel-aged press run, but this time we used only the free run.
The press run was also quite good, but this one has even higher quality.
This is the best wine Kitani has ever made. It's frustrating that the grapes were not grown by himself, but it made him realize the greatness of Hokkaido grapes.
The aroma, acidity, length of finish, and taste in the mouth are all excellent.
By barrel aging during the final stage of fermentation, we enhanced the tension from a slight barrel aroma and tannins without adding oxidative nuances, further bringing out the potential of Kerner.
Kitani himself handled Kerner for the first time, but he feels that he was able to brew without compromising the potential of the very high-quality grapes. It pairs well with grilled white fish such as tilefish, shellfish, and Japanese sweets.
